It started in 1988 with Dean Lavallee, an 1,800 square foot building on Park Avenue in Lake Park, and a stubborn belief that barbecue should be smoked fresh, never rushed. The lines around the block told him he was onto something, and over the next few decades that one small building grew into locations across Palm Beach County. We're still family owned, still smoking every rack by hand, and still proud to call this county home.
Dry Rubbed, Slow Smoked, Never Faked
Every rack, brisket and pulled pork platter that leaves our kitchen was dry rubbed and smoked in house that same day, in smokers Dean designed and perfected himself. We season with a heavy hand and a light touch at once, balancing bold smoke with sauces we make ourselves, from a mild BBQ to our notoriously spicy Stupid BBQ. It's a process we've never shortcut, not once in decades.
